PAPAYA AND CRANBERRY MUFFINS

Doesn’t it look like an interesting combination? And what more can u ask for when it’s combined with Chocolate. This one is surely a healthy treat. Binge on it guys!!! 😀

Ingredients:-

  1. Flax seed powder- 1 tsp.
  2. Water- according to need

Method:-

Soak the flax seed powder in very little water for half an hour and keep it aside.

Dry ingredients:-

  1. Maida- ½ cup
  2. Salt- pinch
  3. Soda- pinch
  4. Baking powder- ½ tsp.
  5. Powdered sugar- ¼ cup
  6. Coco powder- 1 tsp.

Wet ingredients:-

  1. Papaya pulp- ½ cup
  2. Oil- ¼ cup
  3. Flax seed mixture- ¼ cup
  4. Lemon zest- pinch

Method:-

Mix the all the dry ingredients, then add water or milk to form the consistency of the batter. Then beat the wet ingredients well for 10 minutes and keep it aside. Pour the batter in paper cups in the baking tray, fill only half the quantity of the cup. Top with melon seeds and place a piece of cranberry on top of it. Then bake in a pre-heated oven at 180*C for 10-12 minutes. Then remove and let it cool for some time and put icing on top and serve.

Nutritional Value:-

This recipe is an excellent source of many important vitamins like A, C, Manganese, Iron, and Fiber. Cranberry improves the immune system and decreases inflammation. Flax seed reduces the risk of heart diseases. It increases the HDL cholesterol (good). Papaya improves menstrual problems in women.
